Making vegetarian and non vegetarian curries is routine. but adding vegetables or green leafy vegetables is very good for health . Specially kids dont like leafy vegetables . So we can add egg or meat to it and make a non vegetarian dish with vegetables. As we all know Health is Wealth and we want to give greens to the family members regularly. Lets try this different dish..
Ingredients :
Spinach – 2 cups
Eggs -3
Onion – 1
Curry leaves – 2 sprigs
Ginger garlic paste – 1 tsp
Garam masala powder – 1/4 tsp
Turmeric – pinch
Red chillie powder -1 tsp
Salt – to taste
Oil – 2 tsp
Clean, wash and finely cut the spinach. Heat oil in a pan and fry the sliced onions till soft and translucent. Add ginger garlic paste, turmeric, curry leaves, red chillie powder and fry a little more. Add washed spinach and salt as required. Mix well and cover it. Cook till the spinach is completely cooked and dry. Beat the eggs into the curry and cover it again. Donot mix the eggs. After cooking for two minutes on slow fire., mix the curry lightly without breaking the egg and add garam masala powder . Remove from fire. This curry is a good accompaniment for chapathi s/rotis and rice too. Who will refuse this egg along with spinach.. Try it..

Never tried spinach and egg combination. One healthy curry that it!
Mona. really this curry is very tasty. actually my kids dont like greens. but i want them to take more of vegetables specially greens. So oneday i got this idea of adding eggs to spinach curry. Now whenever i make spinach curry, my son always wants egg in it. and he himself prepares the curry again adding eggs. now i am relieved that children are not refusing leafy vegetables atleast in this way..
I tried spinach egg curry.my 3and half yr old son liked it so much.its his favourite now.this curry is very healthy as well as tasty.
