potato curry /bangaaladumpa podi koora
Potato is widely and commonly used vegetable in Indian curries all over the country. They are stored in every house along with onions. Even two potatoes in the home can be made into curry or fry quickly.. Lets prepare a dry curry with potatoes which is a good combination with puri, chapati and also rice and sambhar..

Ingredients :
Boiled potato – 250gms
Onions -2
Green chillies – 4-5
Turmeric powder -1/2tsp
Curry leaves -2 sprigs
Coriander leaves -2 sprigs
Mustard seeds – 1/4tsp
Cumin seeds – 1/4 tsp
Salt – as required
Oil -3 tsp
Wash and boil the potatoes adding 1/4tsp turmeric and required salt for ten minutes or 3/4th cooked. Remove the skin and keep aside. Heat oil in a flat pan and fry the onions till soft and transparent. Add curry leaves and turmeric to it along with sliced or chopped green chillies (you can also add red chillie powder instead of green chillies ).. Fry for two minutes and add cubed potatoes or crushed with hands. Mix well and chek the salt. Cook on slow fire with covered lid for five minutes more and sprinkle chopped coriander leaves. Serve hot..
