mirchi

Green chillies are very hot . We use them in small quantity in our food. But another variety of chillies which are fat  are not so hot . These are used to make mirchi bajjis  and mirchi ka salan, or khurma. bored with these recipes , I tried a different  way of frying them .

mirchi 1

Ingredients :

Green chillies – 200 gms

Turmeric powder – 1/4 tsp

Curry leaves -2 sprigs

Cumin seeds – 1/4 tsp

Mustard seeds -1/4 tsp

Besan /chickpea flour -  4 tbsp

Coriander powder -2 tsp

Garam masala powder – 1/4 tsp

Salt – 1/2 tsp

Oil – 4 tbsp

mirchi

Clean , dry the chillies with cloth and cut into an inch peices.  To reduce the hotness of the chillies, remove the seeds. Heat oil in a non stick pan and add mustard and cumin seeds. When they splutter, add  chillie pieces, turmeric and curry leaves. Mix well and saute on medium heat. After the pieces  are half fried, add  salt . coriander powder  and mix well.  Fry till they are crisp and golden brown. Add chickpea flour /besan along with garam masala powder and fry for two minutes more.  Add chopped coriander leaves and serve hot.
