We normally use dry tamarind in our cooking . Even regular pulihora is made with dry tamarind only. But now in winter,

green fresh tamarind is available in market. We can prepare a delicious and different pulihora with green tamarind. We use green tamarind to make pickle and store for year long..

Ingredients :

Rice – 200 gms

Green tamarind extract – 1/2 cup

Red chillies – 4

Mustard seeds – 1/4 tsp

Cumin seeds – 1/4 tsp

Urad dal – 1 tsp

Asafoetida – pinch

Curry leaves – 2 sprigs

Turmeric powder – 1/4 tsp

Salt – as required

Oil – 3 tbsp

Wash and soak rice for half an hour . Cook the rice such that each grain is separate. Add salt as required and let it cool.  Wash and roughly pound the tamarind with a pestle and add two cups of water. Cook it on slow fire til it is reduced to half a cup.  Extract the thick juice  from it and strain it. Heat oil in a pan and add asafoetida . Add mustard and cumin seeds . When they splutter add red chillies, urad dal. Saute for a minute and add turmeric, curry leaves and tamarind extract. Boil it on low fire till the oil floats. Remove it and add to the rice. Mix well and serve after ten minutes. The pulihora will be very tasty absorbing the tamarind juice.
